hi

i have an underground cellar, about 24cbm.

stays pretty constant at 20 degrees C, went up to about 22 during Melbourne's heatwave and doesn't drop lower than 19

the cellar is VERY humid, as the base is slightly below the natural waterline and i have a pump in a pit that always has water in it. am developing quite a bit of cellar mold after 6 months.

based on these factors, seems a residential split system air conditioner would be perfect to drop the temp and lower the humidity. i understand the benefits of refrigeration systems, but as i want to lower temp AND humidty, seems the split system would be best way to do both most cost effectively.

please let me know your thoughts and experiences.

I put a split system in my below ground cellar, and it increased the humidity in my cellar, so go figure.

You could try using hygroscopic material to pull some of that moisture out of the air. Sugar and salt are quite effective.

hadn't thought of something to pull moisture from the air

i'm worried that 19/20 is too hot for long term wine storage, what do you think?

I think it's more to do with excessive temperature variation particularly daily although the absolute temperature is important. My underground bunker varies from season to season peaking around 23 in summer but not day to day and after 24 years I have not noticed any material premature maturation although with so may screwcaps now a bit wouldn't go astray. We had a 2005 Leconfield Cab last weekend and it was still fresh as a daisy and no different to one consumed around 2009.

Your cellar looks to have better temperature control so I wouldn't bother unless you really want to ensure a good environment and have cash to burn on the power bill.

Split system would reduce humidity but have you measure your actual humidity?
Melbourne does not suffer from high humidity. However, having resident water in the cellar changes the equation. If you slab the base that might prevent ingress of water (?).

I used to keep my cellar at 12.5 C but that was consuming too much energy. I keep it at approx 15 C now (eurocave). 19C may be a tad high but that also depends upon what wines you store and and how long you store before drinking them. I find that Bordeaux wines show more obvious brett when stored at higher temp. Burgundy loses freshness at that temperature. Australian wines are more resilient.

I am no expert but a cellar cooler will control the moisture/humidity, I am very happy with my Fondis but not cheap. Clearly in terms of temperature the constancy is more important than the actual level, but I would aim for 15 degrees as the minimum unless you want to drink the wines earlier.
