2005 Pascal Jolivet Pouilly-Fumé, Loire Valley (cork): 12.5% alc. Medium yellow. Perfumed, grassy nose full of honeysuckle, fennel and lemon, a little soursob and stuck flint in the background; the palate opens with bright acid and fruit, leading to a mouthwatering, bone dry palate that needs food, finishing flinty and grassy, a little bacon fat lingering on. This had already been open three days, it should last an incredibly long time based on this showing.
