Maxwell Lime Cave Cabernet Sauvignon 2006

Postby waiters friend » Fri Jun 12, 2015 10:52 pm

I first visited this McLaren Vale winery 20 years ago. Since then, the range of wines has expanded, the cellar door has moved, but my two favourites - the Ellen Street Shiraz and the Lime Cave Cabernet - remain.

The wine was under screwcap and decanted three hours before service. Red / purple in colour, this wine shows rich ripe blackcurrant, a touch of eucalypt / mint, vanilla, and milk chocolate. The palate is full and rewarding, with firm chewy tannins, good supporting acid, black fruits, and raspberries. This is a full bodied wine which carries its 14.9% alcohol well, and is in a good space at 9 years old. A good balance between fruit, tannins, acid, and development.

Cheers
