Hong Kong/Macau restaurant recommendations please

Hi everybody
Yet another trip thru HK, will be there a few days this time.
OK, I would love advice. We have one, and one only, free night.
I would greatly appreciate the ONE recommendation you have for a great restaurant in HK or Macau.
Preferably BYO, but certainly not essential ( want to open another 96 Rousseau Chambertin and this is the perfect excuse)
Would really want to go somewhere a bit left of centre, bit edgy or new wave.
Also, are there any bars as cool as the million awesome places in Shanghai, any recommendations would also be greatly appreciated!!!

Robuchon or Tim's Kitchen. Robuchon is pretty expensive to BYO. Tim's no problems. If going to Tim's take a bottle of spatlese too. It is the perfect palate cleanser between dishes of Canto food.

Bars? For tourists the sky bar at the sheraton has great views of the Island and wines by the glass such as Grange ( not suggesting you drink Grange ).

Talk to Julien Froger if you get the chance and stock up on burgs to take out of HKG.

MIT have dim sum on the Sundaynat the four seasons joint.

Dinner at Island Tang (http://www.islandtang.com/) was very good last night. Corkage is 100 HKD per person (not bottles).
