EST is the "fine dining" part of the Establishment wine bar/bar/night place on George Street, Sydney
Two of us went there for dinner on a Saturday evening. It was full without being overly busy. Looked like there were no vacant tables.

Cuisine: Modern Australian /Bistro ie 6 - 8 starters; 6-8 mains; 6 - 8 deserts. Alternative is an extensive "tasting menu" with or without wine and a three course chefs menu for $150 by chosing one each of starters, mains and desert. One you understand that, the on line menu is easier to follow too.

Service: Very good. Actually excellent. Est is on level 1 of the building. On arrival at the ground floor entrance you are met by a well mannered "front desk" type and escorted into the lift and upstairs where you are handed over to someone who seats you and takes a drinks order. Sommelier was excellent and our table girl was really good. Cheerful and helpful without being intrusive.

Food: Reasonable choice and range. Well presented.

Value: Expensive, but good value for money. Our bill was $440 for the two of us. Each had a starter and main, cheese platter shared for desert. Wine by the glass as below.

Ambience: Good. Background music a little intrusive. And the tables are a bit wide so hard to hold an intimate conversation.

Glassware: Very good. Appropriate for each wine.

Wine list: Extensive. Runs to 20 odd pages. Listed by variety. And a reasonable (in number if not in price) "by the glass" list. Which is good because we dont have the same taste in wine and so have to resort to by the glass. We started with a glass each of champagne (NV Ruinart @ $29). She went on with a glass of Chablis (2008 corinne et jean pierre grossot chablis 1er cru 'vaucoupin' @ $21.00)and I had a half bottle of Burgundy (2008 domaine pavelot savigny-les-beaunes @ $70.00).

BYO Details: Doubt it and didn't ask.

Score: I rate it highly. Were it not for the cost, I would go back frequently although of course, were it not for the cost, the service and so on would not be as good, and so I probably wouldn't go back frequently.
